  • To a large, heavy bottomed pot, add extra virgin olive oil, and mirepoix (grated vegetables and garlic). Cook over medium heat for 10 minutes, until fragrant and translucent. Then, add the pork and cook for 10 minutes until browned and slightly caramelized.
  • Add tomato paste, canned tomatoes, white wine, beef broth and bay leaf. Bring the sauce to a slow simmer.
  • Cover and simmer over low heat for about 40 minutes, stirring occasionally.
  • When the sauce is finished, remove the bay leaf, add butter and parmesan. Taste the sauce and adjust salt seasoning to your preference. Toss to combine. Serve over fresh pasta.
